Production of soy protein concentrate with the recovery of bioactive compounds: From destruction to valorization

This work aimed to develop a novel methodology based on aqueous micellar systems (AMS), for producing soy protein concentrates (SPC) from soybean flour and recovering high-valuable bioactive compounds as by-products. Ethoxylated aliphatic alcohols Tergitol 15-S-7 15-S-9, non-toxic biodegradable surfactants, were selected form the AMS. The consisted of an extractive stage with AMS, which rendered both pellet, i.e., SPC, supernatant containing extracted compounds. latter was further heated above cloud point temperature, thus resulting in biphasic system formed by micelle-rich phase (MP) (AP). Obtained SPC showed noticeable loss (?90%) trypsin inhibitor activity, total content close 60%, soluble amounts varying 19% 34%, remarkable released (by simulated digestion) antioxidant antihypertensive activities. Those indicators are similar or even better than those corresponding classical acid-extraction method. AMS also exhibited enhanced efficiency extracting antinutrients such non-digestible oligosaccharides, inhibitors, lectins mostly recovered at AP separated isoflavones, concentrated isolated MP. recovery all mentioned compounds, whether beneficial undesirable, broadens their uses research, food, pharmacological fields. successful performance, simplicity, scalability, sustainability make proposed AMS-based extraction powerful tool processing plant derivatives valorizing • Aqueous (AMS) allowed (SPC).
